Texaslicious Turkey Chili (Gluten-Free)

1 lb ground Turkey Breast
1 medium onion diced
2 cans diced tomatoes (I used organic canned tomatoes)
1 can diced and roasted green chilies
3 palmfuls chili powder
3 palmfuls ground cumin
1 teaspoon garlic powder
1 teaspoon onion powder
1 1/2 tsp sea salt
1 tsp ground black pepper
1 tablespoon olive oil
1 tablespoon tapioca starch combined with 1/2 cup cool water for thickening (can use your choice of thickening but tapioca starch is gluten-free and works well)

In a large pot add the olive oil, turkey, onion, sea salt, pepper, garlic powder, onion powder and brown over medium-high heat. Add tomatoes, green chilies, chili powder, ground cumin and stir well. Once well combined cover with water and simmer over medium heat for 30 to 45 minutes to allow flavors to combine.

(Note: Check your seasonings once water is added and add more if necessary.)

(A great add-in to this is chicken jalapeno sausage. If you have a Whole Foods nearby, you can purchase the raw chicken sausages in the meat market.)

I created this recipe this evening for my family & it was a huge success. The flavors are wonderful! I suffer from PCOS & Insulin Resistence so this is a great recipe - all legal.
